bay leaves
tsp black peppercorns

thyme sprigs

garlic cloves, peeled
Zest from 1 lemon
olive oil to cover

Step 1
Put everything but the oil into a sterilized jar. Pour over enough olive oil to cover. Seal and refrigerate. This will keep for about a month.
