ingredients

Microgreen Salad with Cabernet

½
cup microgreens
¼
cup frisee, centre leaves separated
12
cabernet franc grapes, frozen and crushed
1
tsp lemon juice
1
tsp olive oil
salt

Assembly

4
oz Quebec Brie, cut into 1 oz square portions, room temperature
1
cup cabernet franc ice wine, reduced by ⅔ and cooled

Tbsp almonds, skinless and crushed

Step 1

Before serving, place all ingredients, in a bowl. Season with salt, toss to incorporate and set aside for assembly.

Step 2

Place 1 piece of Quebec Brie on each plate.

Step 3

Spoon cabernet franc ice wine reduction around Quebec Brie.

Step 4

Place equal amounts of Microgreen Salad with Cabernet Franc Grapes beside Quebec Brie.

Step 5

Garnish top of Quebec Brie with almonds and serve.
