Traditionally either cabbage or kale are used in Rumbledethumps. But being the risk taker that I am, I tried mixing both together (doubling the regular 250 g to 500g). The results were spectacular and I felt compelled to share!
Preheat the oven to 180ºC/350ºF
Mash potatoes and turnip/swede into a large mixing bowl and put to one side
Melt butter in a frying pan, add finely sliced cabbage and kale and cook gently for 2-3 minutes until softened but not brown.
Add cabbage and kale to the bowl of potato and turnip/swede, and mash together thoroughly. Season with salt and pepper to taste.
Place the mashed mixture in an ovenproof baking dish, garnish the top layer with Cheddar cheese, then cover with a lid or aluminum foil and bake in the oven for about 30 minutes.
Remove the lid and cook for an additional 5 mins or until golden brown.
