Tbsp coffee, freshly ground

Tbsp sweet Spanish paprika

Tbsp ancho chile powder
1
Tbsp ground coriander seed
½
tsp cayenne pepper
1
Tbsp dark brown sugar
1
tsp onion powder
1
tsp ground black pepper
3
clove garlic, minced

Tbsp kosher salt
2
Tbsp olive oil

thick centre-cut pork chops

Step 1
Combine all the rub ingredients except for the kosher salt and olive oil.
Step 2
Pat pork dry with paper towels. Rub with olive oil. Rub each chop liberally with the rub.
Step 3
Store in a non-reactive container wrapped tightly in the refrigerator for at least 2 hours, but preferably overnight.
Step 4
Preheat grill to medium-high. Season chops with the Kosher Salt. Grill 6-8 minutes on each side until internal temperature reaches 160ºF.
Step 5
Serve and enjoy!
