Try Recreating These Iconic Deli Sandwiches at Home

Recreating classic deli sandwiches at home is easier than you think with a few chef-inspired tips paired with Dempster’s® Signature Everything Bread, which is made with real onions and roasted garlic. These flavours pair perfectly with the two recipes we’re featuring today — a cheesy fried mortadella and provolone sandwich, and a mouthwatering pastrami melt. Dempster’s®  makes it easy to enjoy restaurant quality sandwiches at home, so don’t be intimidated and try cooking up these classics for yourself!

Fried Mortadella Provolone Sandwich

Mortadella is a classic deli cold cut, and it’s made even better when sliced thinly, fried up with provolone cheese and served in between two perfectly toasted slices of Dempster’s® Signature Everything Bread. The viral version of this sandwich originated at a cafe in Brazil and now, we’re giving it our own spin.

Ingredients:

2 slices Dempster’s® Signature Everything Bread

12 very thinly sliced mortadella (about 100g; get it shaved at the deli counter)

3 slices Provolone

1 tbsp mayo

1 tbsp Dijon mustard

2 tsp chopped pistachios

Drizzle of honey

Oil for cooking

Directions:

Preheat a large skillet on medium to medium-high heat. Divide mortadella into 3 piles of 4 slices each, making sure to lay them ruffled up rather than flat on top of one another. Drizzle a bit of oil in the skillet and add the three piles of mortadella to fry until browned on the edges. Flip each pile and place a slice of provolone on top.

Once the bottom side is browned on the edges, pile all three stacks into one and push it off to the edge of the skillet to make room. Place the two slices of Dempster’s® Signature Everything Bread into the skillet, mopping up any oil in the pan from the mortadella and toast until golden

brown on both sides. Remove the mortadella provolone stack whenever the cheese is melted and gooey. Keep it to the side with a lid on it to keep it warm.

Once the Dempster’s® Signature Everything Bread is nicely toasted on both sides, remove from the skillet and spread a thin layer of mayo on one, and Dijon mustard on the other. Add the mortadella/provolone stack, sprinkle with pistachios and drizzle with as much honey as desired. Cover with other toasted bread then cut sandwich down the middle to enjoy!

Pastrami Melt

flavour. The secret is to slow cook the brisket until it’s super tender, then pile the sandwich high with cabbage slaw, perfectly melted Swiss Cheese and two thick slices of Dempster’s® Signature Everything Bread. Talk about iconic!

Ingredients:

2 slices Dempster’s® Signature Everything Bread

2 lbs pre-seasoned, cured pastrami

2 tbsp salt

½ cup brown sugar

3 tbsp black pepper

3 tbsp garlic powder

Coleslaw:

¼ of a purple cabbage

¼ of a green cabbage

1 medium carrot

1 tsp salt

1 tbsp grainy Dijon

2 tbsp mayo

For building:

4-6 slices Swiss cheese

Mayo

Yellow mustard

Directions:

Preheat the smoker to 250–275°F, depending on your smoker.

In a bowl, mix the brown sugar, salt, pepper and garlic powder. Coat the cured pastrami with the seasoning – only use enough to just coat the meat. You can keep the mix for another use. Place the pastrami in the smoker. Once the internal temp of the brisket hits 170°F, which should take

anywhere from three to four hours, remove from the smoker and wrap it tight in parchment paper and aluminium foil. Place pastrami back in the smoker for another two hours.

While the brisket is cooking, carefully use a mandolin to shave the purple and green cabbage, and thinly chop the peeled carrot. Season the slaw with salt, grainy Dijon and mayo, mix and set aside.

Once the pastrami is done, remove from the smoker and let it rest, still wrapped, for 10 minutes, then carve by hand into long, thinly shaved slices.

When it’s time to build your sandwich, spread a thin layer of mayo onto one side of your Dempster’s® Signature Everything Bread. Place the Swiss Cheese straight onto a preheated pan and let it melt and slightly bubble. Place the bread on top of the cheese, mayo side up. Flip the bread so the side with the mayo can toast and then remove from the pan and transfer to a plate or cutting board with the melted cheese side up.

Pile the sliced pastrami onto one slice of bread, drizzle with yellow mustard, top with coleslaw, close the sandwich and cut in half on a diagonal.
