Rest time: 40 minutes. The cookie dough can be chilled for up to 3 months in an airtight container in the freezer.
In a stand mixer, whip together the butter and brown sugar until light and fluffy. Add the eggs and vanilla and combine.
Add all of the dry ingredients (except the chocolate chips) into the wet batter and combine using a stand mixer with beater attachment.
Fold the chocolate chips into the batter.
Using a spoon or ice cream scoop (for large cookies), portion the dough onto a baking tray lined with parchment paper. Make sure they are well spaced apart (2-3 inches), so they don’t join when baked.
5. Chill in the freezer for 30 minutes before baking.
Preheat the oven to 350°F and bake for about 18 minutes or until golden on the edges.
Allow to cool for 10 minutes and enjoy.
