An easy and tasty way to serve squash to a crowd. The recipe can easily be doubled.

acorn squash

Tbsp olive oil
4
slices bacon
3
Tbsp packed brown sugar
½
tsp cumin
pinch black pepper

Step 1
Preheat oven to 400 F.
Step 2
Cut acorn squash in half, stem to bottom. Scoop out and discard seeds and pulp. Cut each half into 4 wedges. Place in bowl. Drizzle with olive oil and rub to coat all sides.
Step 3
Cut bacon slices in half. Wrap bacon around mid-sections of squash wedges, overlapping bacon ends on cut-side of squash wedges. Place wedges in ceramic or glass baking dish with bacon ends on bottom (prevents bacon from curling during baking).
Step 4
In small dish, mix brown sugar, cumin and pepper. Sprinkle over squash wedges.
Step 5
Bake 30 to 35 minutes, until bacon is browned and squash can easily be pierced with a knife.
