Season the salmon cubes with sea salt, black pepper, onion powder and olive oil.
Make the maple tahini sauce by combining tahini, maple syrup, coconut aminos, rice vinegar, garlic, ginger, salt, pepper and water using a whisk. Reserve about a tablespoon of the sauce to drizzle on the salmon later, then coat the salmon cubes with the maple tahini sauce.
Preheat air fryer to 400°F and spray the basket with a dash of olive oil to prevent sticking. Air fry the salmon for 5-7 minutes.
Transfer the salmon bites to a plate and top with leftover maple tahini sauce, sesame seeds and scallions.
Serve with rice or side of choice.
