cup (250 ml) All-Bran* Bran Flakes cereal

cup (300 ml) all-purpose flour

tsp (50 ml) soft butter or margarine

cup (175 ml) granulated sugar

tsp (5 ml) grated lemon rind

cup (125 ml) 2% milk

cup (625 ml) coarsely chopped peeled apples (about 2 medium)

Step 1

In medium bowl, mix together cereal, sugar, salt and cinnamon. Using pastry blender, cut in butter until mixture resembles coarse crumbs. Set aside.

Step 2

Crush cereal to 125 ml (1/2 cup). In medium bowl, mix together crushed cereal, flour, baking powder and salt. Set aside.

Step 3

In large mixing bowl, cream together butter and sugar until fluffy. Beat in egg and lemon rind. Add cereal mixture alternately with milk, mixing well after each addition. Stir in apples.

Step 4

Spread batter evenly in 23 cm (9-inch) square baking pan coated with non-stick cooking spray. Sprinkle with topping.

Step 5

Bake at 190ºC (375ºF) for about 35 minutes or until wooden pick inserted in centre comes out clean. Let cool. Serve with ice cream or whipped cream if desired.
