Try this soy and ginger roasted salmon for an Asian-inspired twist on everyday fish.

lb(s) salmon, fillet, (with skin)

Tbsp vegetable oil

Tbsp rice vinegar
2
Tbsp soy sauce
1
Tbsp packed brown sugar
2
Tbsp minced ginger, root
2
cloves garlic, minced
1
pinch pepper

pinch cayenne pepper

Step 1
Preheat oven to 450 degrees F (230 degrees C).
Step 2
Make several shallow diagonal slashes in skinless side of salmon.
Step 3
Place, skin side up, in shallow glass dish.
Step 4
Whisk together oil, rice vinegar, soy sauce, sugar, gingerroot, garlic, pepper and cayenne; pour over salmon. Cover and marinate for 30 minutes.
Step 5
Discarding marinade, place fillet, skin side down in roasting pan.
Step 6
Roast for calculated time: 10 minutes per inch or until fish flakes easily when tested with fork.
