In a large bowl, using an electric mixer and beat Becel® Original margarine with sugar until creamy. Beat in egg then vanilla until well blended.
In a small bowl, stir flour with baking powder and salt until mixed. Add to Becel® Original margarine mixture. Beat on low speed just until blended.
Remove dough and gather into a ball. Divide in half and wrap each in plastic wrap. Flatten into discs. Refrigerate at least 1 hour before rolling out.
Preheat oven to 350°F (180°C) and line 2 cookie sheets with parchment paper. Dough is easiest to roll between two sheets of plastic wrap. Roll dough about ¼-inch (0.5 cm) thick. Using a 2½-inch (6 cm) cookie cutter, dipped in flour if needed to prevent sticking cut out dough. Place on baking sheets, at least 2-inches (5 cm) apart.
Bake in preheated oven until just golden around edges for 10-12 minutes, depending on thickness. Remove to a cooling rack to cool completely.
