Chocolate Sauce

lb(s) high quality dark sweet chocolate
cup heavy cream

tsp ground ancho chili powder

Assembly

scoops high quality vanilla gelato

Tbsp raw pistachios

cup blueberries
1
cup raspberries
fresh mint for garnish

Step 1

Chop the chocolate and place it in a double boiler with the cream, Ancho chili and salt. Melt and whisk gently until it all comes together. Keep it warm on the hot water bath.

Step 2

Put 1 tablespoon (15 ml) of chocolate sauce in the bottom of three parfait glasses or dessert bowls.

Step 3

Drizzle remaining sauce on each scoop of ice cream

Step 4

Toast the pistachios in a hot, dry pan with some sea salt. Chop roughly and reserve.

Step 5

Put 1 tablespoon (15 ml) of chocolate sauce in the bottom of three parfait glasses or dessert bowls.

Step 6

Put 1 scoop of ice cream in each glass

Step 7

Drizzle remaining sauce on each scoop of ice cream

Step 8

Sprinkle berries on top of ice cream.

Step 9

Garnish with pistachios and a sprig of mint.
