A healthy, colourful and delicious soup filled with black beans, corn, celery, sweet potatoes, kale, brown rice and spices.

Chop the vegetables.
Heat a large pot with the oil. Saute the onions and garlic for a few minutes, until they begin to turn translucent.
In another pot, pour in rice and 2 cups water and bring to a boil. Let simmer for 25-30 minutes until cooked.
Add the celery, sweet potato and spices to first pot with garlic. Saute for another few minutes, until you smell the aroma of the spices.
Add the tomato paste, bouillon cube, 4 cups water, black beans and corn kernels.
Simmer, covered, for 15-20 minutes.
Add the kale and turn off the heat.
Sprinkle fresh cilantro on top before serving.
