lb(s) medium waxy potatoes, whole and unpeeled

pinch Salt and pepper

Tbsp butter
A handful or two of chopped fresh parsley

Step 1
Bring a large pot of water to the boil. Salt it and add the potatoes. Cook until tender. Drain and peel. Toss with the butter and parsley to coat. Serve.
