L beef stock
1
cup red wine
1
large onion, medium dice
1
jumbo orange carrot, peeled with medium dice
3
stalks celery, medium dice
4
clove garlic, crushed
1
leaves bay
1
Anaheim chilli, halved
3
piece juniper berry

Tbsp canola oil
salt and pepper

Step 1
Season short rib with salt and pepper. Sear over medium heat. Place into roasting pan.
Step 2
Place onion, carrot, celery, garlic, bay, chilli, juniper berry with short rib. Cover with beef stock and red wine mixture.
Step 3
Braise in oven at 300ºF covered. 3-4 hours or until fork tender.
