Tbsp vegetable oil

cup leeks, finely chopped (white and green parts only)

g package frozen shelled edamame (soybeans)

tsp fresh ginger, finely grated

red bell pepper, diced

Tbsp light miso paste
dash sesame oil

Tbsp toasted sesame seeds

Step 1
Heat a large sauté pan over medium heat and add the oil. Add the leeks and sauté until tender, about 3 minutes. Add the edamame and 1 cup of water and bring to a simmer. Simmer, uncovered, until almost all the liquid has evaporated, about 5 minutes.
Step 2
Reduce the heat to low and stir in the pepper, miso paste and sesame oil (miso is salty – added salt should not be needed). Stir in the sesame seeds and serve.
