Bag of washed baby spinach (350g)

cup feta (60 mL)

cup salted cashews (60 mL)
Strawberry vinaigrette
tsp olive oil (40 mL)
tsp red wine vinegar (20 mL)

medium firm vine tomatoes or 10 roma, chopped

bunch green onion, finely chopped (1 cup or 250 mL)

clove fresh garlic, crushed you have to looove garlic for this one.
Pizza crust from the store (you want a nice soft white crust for this)

Step 1

Get toppings ready such as feta, sliced strawberries, cashews and sweet onion. This is fabulous with strawberry vinaigrette.

Step 2

Mix together olive oil, vinegar, wine, spices sugar and Parmesan, in a large mixing bowl.

Step 3

Add tomatoes, green onion and crushed garlic.

Step 4

Fold together, cover and let stand in fridge.

Step 5

Makes 3 1/2 cup (but 1 1/2 cups are used for the meatballs).

Step 6

Preheat oven to 375 F (190 C)

Step 7

Brush pizza crust with olive oil.

Step 8

Bake for 10 minutes or until golden.

Step 9

Remember if you make this recipe before the meatballs to set aside 1 1/2 cups for them before chowing down.
