If you’re a fan of California Rolls but not up for the task of rolling your own sushi at home, say hello to this weeknight-friendly California Roll Bowl! It’s essentially a deconstructed California Roll: fluffy sushi rice is topped with surimi (AKA imitation crab), cucumber, avocado, edamame and a homemade Carrot Miso Dressing for a protein-packed dinner that’s seriously easy to make. The creamy umami dressing really ties the whole dish together, and leftovers can easily be used as a marinade or to top your next salad.

Carrot Miso Dressing

Cook sushi rice according to package instructions. Once cooked, stir in rice vinegar. Set aside and let cool to room temperature.
Meanwhile, combine all Carrot Miso Dressing ingredients in food processor and blitz until smooth.
In a small bowl, toss surimi with mayonnaise.
Divide sushi rice between two bowls and top with nori sheets, surimi-mayo mixture, edamame, avocado and cucumber. Sprinkle generously with furikake, and drizzle with Carrot Miso Dressing.
