Prepare the UNCLE BEN’S® Wholegrain Brown Rice without butter and salt; cool slightly. Combine the vinegar, sugar and salt in a small bowl. Microwave for 45 to 60 seconds or until sugar is dissolved. Gently stir the vinegar mixture into the rice.
Lay a sheet of parchment paper on a flat surface. Trim the nori so it’s width matches the length of the crab; place on the parchment. Spread about 1/2 cup (125 mL) rice over the nori, leaving a 1-inch (2.5 cm) strip at the top.
Arrange cucumber, avocado and crab meat along the bottom of the nori. Use the parchment to tightly roll the nori over the filling into a log. Brush water over the top strip of nori to help it adhere; cut into 4 portions. Repeat with remaining ingredients. Serve with soy sauce, wasabi and pickled ginger.
