Place pizza dough in an oiled bowl and cover with plastic wrap and a towel; let dough rise at room temperature for 30-90 minutes.
Preheat oven to 400ºF.
Brush oil on the edges of the pan.
Once dough has risen, dust with a light layer of flour, place dough in the pan and stretch evenly to fit; sprinkle pepper over the surface of the dough, followed by 3/4 of the Mozzarella.
Layer the pancetta over the mozzarella and top with remaining Mozzarella.
Bake pizza for 10-15 minutes, or until dough starts to brown; pop any air bubbles with a fork as they appear.
Place pizza on a clean surface to cool to room temperature.
Set oven to broil.
Once pizza and baking tray cool to room temperature, place pizza back onto baking tray.
Crack 4 eggs into a bowl and whisk together with the Parmesan cheese.
Pour mixture onto the pizza and spread eggs by hand until pizza is entirely covered.
Place pizza back into oven and cook for another 5 minutes, or until egg is no longer liquid. To check doneness, tilt baking tray to see if egg runs; if egg runs, continue baking for an additional 2 minutes.
Serve pizza topped with fresh cracked black pepper.
