June is Pride month and this time around I’m not holding back with flavours and colours in this fruity yet tropical rainbow-coloured cocktail. Layered with a quick and easy homemade strawberry puree, pineapple juice and rum, and lastly blue curacao and coconut water, this refreshing cocktail is perfect for the summer heat. Cheers!

Strawberry Puree
Over the Rainbow Cocktail

For the strawberry puree, place strawberries, sugar and lemon juice in a blender.
Blend for a minute, transfer to a jar and set it aside.
For the cocktail, add strawberry puree into a tall cocktail glass and fill with crushed ice.
Combine pineapple juice and coconut rum and slowly pour it over the crushed ice in the glass.
Combine coconut water and blue curacao and slowly pour it over the pineapple-rum layer.
Garnish with an orange slice and enjoy!
