These cheesy quesadillas are a fun spin on the classic burger, in quesadilla form! Crumbled ground beef, cheese and your favourite fixings are added to a tortilla and pan fried to crispy, gooey, golden perfection. I’ve lightly caramelized some onions with the ground beef for a little sweetness, added my must-have burger condiment chipotle mayo, and a little trick to the best burgers: adding mustard to the burger patty, or in this case, ground beef!

For the beef, heat 1 teaspoon oil in a medium sized skillet over medium-low heat. Add in the chopped onion. Cook for 5-7 minutes, until golden and caramelized.
Add the ground beef to the skillet, using a wooden spoon to break it up into crumbles. Season with salt and pepper. Cook until lightly browned, about 5 minutes.
Add in the mayonnaise and mustard. Mix well, cook for another 2 minutes, until the condiments have melted in and the beef is browned, but not dry.
Heat a large skillet over medium-high, add remaining 2 teaspoons of oil.
Spread your desired amount of chipotle mayonnaise, mustard and ketchup over one tortilla. Sprinkle the bottom half with shredded cheese, followed by ground beef, lettuce, tomatoes, onions, pickles, and more shredded cheese. Fold the top half over the bottom, pressing down gently.
Cook until golden, flip and repeat. About 1 minute per side.
Remove the quesadilla from the skillet, cut in half, repeat with the remaining 3 tortillas and serve immediately.
