Season chicken breast with salt and pepper. Season flour with salt and pepper. Dust each chicken breast in the flour mixture.
Whisk together eggs, dijon, salt and pepper. Coat each chicken breast in the egg mixture.
Stir together bread crumbs, garlic powder, onion powder, salt and pepper. Coat each chicken breast in the bread crumbs, shaking off any excess before frying.
To a heavy bottom skillet over medium heat add avocado oil. Once oil is heated, working in batches pan fry the chicken until golden and cooked throughout, about 2 to 3 minutes per side. Add additional avocado oil as needed.
Spread chicken sauce (or mayo) on bottom of buns. Top with shredded lettuce and sweet pickles. Finish with chicken schnitzel and enjoy!
