Turn your favourite chicken schnitzel into an epic sandwich! Garnish it with your favourite toppings and sauces and turn it into something your whole family will enjoy this summer. My go to toppings in a chicken schnitzel sandwich are a creamy chicken sauce, shredded lettuce and butter pickles in a soft bun. The sweetness of the pickles adds a perfect touch of sweetness to go with the savoury and crispy chicken.

chicken breast, butterflied & flattened
Salt and pepper, to taste

cup all purpose flour

Avocado oil, for frying

Chicken Schnitzel Sandwich prep
Step 1

Season chicken breast with salt and pepper. Season flour with salt and pepper. Dust each chicken breast in the flour mixture.

Whisk together eggs, dijon, salt and pepper. Coat each chicken breast in the egg mixture.

Step 3

Stir together bread crumbs, garlic powder, onion powder, salt and pepper. Coat each chicken breast in the bread crumbs, shaking off any excess before frying.

Step 4

To a heavy bottom skillet over medium heat add avocado oil. Once oil is heated, working in batches pan fry the chicken until golden and cooked throughout, about 2 to 3 minutes per side. Add additional avocado oil as needed.

Step 5

Spread chicken sauce (or mayo) on bottom of buns. Top with shredded lettuce and sweet pickles. Finish with chicken schnitzel and enjoy!
