The star dish on Sunny’s – a Kelowna, BC diner’s menu – is this offbeat, funky plate. You may not think to put creamy, soft scrambled eggs, bacon, extra sharp cheddar and peanut butter on the same piece of crusty French bread, but one bite and you’ll be a convert.

Try to use a heavily smoked bacon if possible. No extra salt is needed due to the bacon and peanut butter, but it can be added if desired.
Preheat a non-stick, medium-sized frying pan.
Add bacon pieces to the heated pan and cook until crispy. Remove bacon from the pan and reserve bacon fat for next step.
Add scallions to the bacon fat and cook for 1 minute.
Then, add whisked eggs and cheddar cheese and cook for 1-2 minutes or until softly scrambled. Eggs should be slightly runny.
Toast slices of French extra-thick bread. Spread peanut butter on toast slices.
Serve the scramble eggs on top of heavily peanut-buttered toast, open-face style.
Sprinkle with cheese curds and desired amount of cracked pepper.
