If you’ve been on TikTok in the past few weeks, you have undoubtedly seen the viral cookie-croissant hybrid taking social media by storm. Everyone has been making their own version of the “Crookie,” which is a Parisian pastry creation from Boulangerie Louvard that has become a fan favourite all around the world. It features a flaky croissant filled and topped with chocolate chip cookie dough.
Just in case you can’t jet off to Paris, this recipe will walk you through how to make an at-home version using store-bought butter croissants and homemade chocolate chip cookie dough. The final result is a warm, flaky pastry with a crunchy cookie shell and a gooey cookie center. It’s best enjoyed with a glass of cold milk in hand for dunking!

Preheat oven to 375°F. Line a large baking sheet with parchment paper and set aside.
Add cubed butter to a small saucepan over medium heat. Stir until butter melts and becomes foamy. Once the foam dies down slightly and the butter starts to smell nutty, remove the pan from the heat and pour it into a bowl to cool.
Once cooled, pour brown butter into a large bowl. Whisk granulated and brown sugar into the butter. Crack and whisk in the egg followed by the vanilla extract.
Add flour, baking soda and salt to the dough mixture. Use a spatula to fold in the dry ingredients until just combined. Gently mix in the chocolate chips. Set aside.
Slice croissants in half lengthwise and place them on the lined baking sheet. Use a small cookie scoop (or two spoons) to dollop 2 heaping tablespoons of cookie dough onto the bottom half of each croissant. Use an offset spatula (or the back of a spoon) to spread out the dough. Close up the croissants.
Dollop a final tablespoon of cookie dough on top of each croissant and spread it out slightly. Top croissants with a few more chocolate chips and sprinkle with flaky salt.
Bake for 13-15 minutes until golden.
Dust with powdered sugar before serving.
