Creamy, cheesy scalloped potatoes are the ultimate side dish: whether you’re whipping them up for a holiday get together or just a family dinner, they’re sure to satisfy. Thinly sliced potatoes are layered together with thinly sliced onions, then smothered in a rich, creamy sauce and sprinkled with cheddar cheese and baked to golden, tender perfection. Preheat oven to 400ºF and grease a 9×13-inch baking dish with butter.
In a small saucepan, melt butter over medium heat. Mix in flour and salt to taste, whisking for 1 minute. Add in milk, thyme, salt and pepper to taste. Continue stirring until the sauce is thick enough to lightly coat the back of a spoon. Set aside.
Layer ⅓ of potatoes in the baking dish, then top with ½ the onions and sprinkle with 1 cup cheese. Top with ⅓ potatoes, then remaining onions, then the remaining potatoes.
Pour sauce over the potatoes, then sprinkle remaining cheese on top.
Cover with tinfoil and bake for 40 minutes, then uncover and bake for an additional 40 to 50 minutes, or until potatoes are tender and cheese is browned on top. Sprinkle with fresh cracked pepper to taste and thyme to garnish.
