Make up to 48 hours in advance, refrigerate and bake when ready.
For the sauce, in a large skillet over medium heat add the olive oil and ground beef.
Season with salt, pepper, garlic, oregano and chili flakes. Cook until the beef is browned and cooked throughout.
Add the marinara sauce. Bring to a gentle simmer for 10 to 15 minutes to allow the flavours to mend. Remove from heat and set aside until ready to assemble.
For the cheese, in a large mixing bowl add the cottage cheese, eggs, mozzarella, parmesan and parsley. Stir until well combined. Season to taste with salt and pepper. Refrigerate until ready to use.
To assemble, preheat the oven to 375ºF. Add a spoonful of sauce to a 9 x 12-inch baking dish and begin with a layer of lasagna noodles.
Top with ⅓ the cheese mixture, ¼ the sauce mixture and a layer of lasagna noodles. Repeat two times.
Finish with a final layer of sauce and a generous sprinkle of mozzarella cheese.
Bake for 45-50 minutes, until the noodles are cooked throughout and the cheese is bubbly.
Let set 15 minutes before slicing and serving.
