Inspired by the viral (and delicious!) Hailey Bieber pizza toast, I’ve been enjoying this cottage cheese pizza toast on repeat, and I think you will too! It’s made on crusty sourdough that’s topped with your favourite pasta sauce, high-protein cottage cheese, fresh pesto, parmesan and spicy chili flakes. The trick here is to use a good quality pasta sauce (look for one with simple ingredients) and fresh pesto. I like to keep it simple, but you can easily add on ingredients like pepperoni, olives, or mushrooms to customize it with your favourite pizza toppings. It’s the perfect quick lunch that’ll keep you going until dinner!

Make the pesto: add the basil and pine nuts to a mini food processor, blend until finely chopped. Scrape down the sides and add in the parmesan, garlic and salt. Blend. In a slow stream add the olive oil, with the food processor running. Blend until the pesto is smooth and the ingredients are very finely chopped.
To make your toast, heat a heavy bottomed skillet over medium high heat. Drizzle some olive oil over a slice of sourdough. Place the sourdough into the skillet, oil side down. Toast until golden about one minute. Flip and toast the plain side, about one minute.
To assemble the toast, spread a layer of pasta sauce over the toast.
Next, top with a thicker layer of cottage cheese.
Drizzle with pesto and sprinkle with freshly grated parmesan and chili flakes. Serve immediately.
