Avocado Crema:

Corn or flour tortillas
Avocado Crema Shredded Cotija cheese (or sub white cheddar)

Step 1

Prepare and Slice the Pork: Slice the pork tenderloin into thin strips.

In a large bowl, mix the olive oil, sugar, cumin, bouillon, onion powder, garlic powder, paprika, salt, and pepper. Once the seasoning mixture is ready, add the pork strips to the bowl. Toss the pork thoroughly, ensuring each strip is evenly coated with the seasoning.

Cook the Pork: Heat a cast iron skillet over medium-high heat. Once the skillet is hot, add the seasoned pork strips in batches to avoid overcrowding the pan. Cook the pork for about 3-4 minutes on each side until it is fully cooked and slightly crispy on the edges. Remove the pork from the skillet and set it aside.

 Make the Avocado Crema: Combine the avocado, Greek yogurt (or sour cream), lime juice, pickled jalapeño brine, and salt. Blend the ingredients until the mixture becomes smooth and creamy. Taste the avocado crema and adjust the seasoning if necessary. Set the crema aside until you are ready to assemble the tacos.

Assemble the Tacos: Warm the tortillas by heating them in a pan or directly over a gas flame for a few seconds on each side. Spread a generous layer of avocado crema onto each tortilla. Add the cooked pork strips, followed by shredded Cotija cheese (or white cheddar), cilantro, pickled red onions, and a drizzle of hot sauce for extra heat, if desired.
