piece chicken wings (about 3 lbs/1.5 kg)

cup (50 mL) all-purpose flour

tsp (5 mL) each salt, pepper and paprika

eggs

cup (150 mL) Parmesan cheese, grated

cup (125 mL) dry breadcrumbs

tsp (5 mL) dried Italian seasoning or basil

Step 1
Line large rimmed baking sheet with foil; grease or mist with olive oil cooking spray. Removing wing tips, separate wings at joints.
Step 2
In bowl, combine flour, salt, pepper and paprika. In second bowl, beat eggs. In third bowl, combine cheese, bread crumbs and Italian seasoning. Dip wings into flour mixture, then into eggs, then into cheese mixture, pressing firmly to coat.
Step 3
Arrange wings on prepared baking sheet. Bake in preheated 400°F (200°C) oven, turning once, until juices run clear when chicken is pierced, and coating is golden brown and crisp, about 35 minutes.
