Just by using a small amount of cordial, your sorbet will take on the fruity and floral flavour of pomegranates and elderflowers – a combination that encompasses summer!

oz fresh or frozen strawberries
½
cup bottlegreen Pomegranate & Elderflower Cordial
½
cup honey
4
cups water
¾
cup sugar
½
cup light corn syrup

Step 1
Blend strawberries until smooth and mix in honey.
Step 2
In a saucepan, combine water, sugar, light corn syrup and Pomegranate & Elderflower Cordial. Bring to a boil until sugar dissolves.
Step 3
Mix syrup with the blended strawberry and Honey mixture and place into an airtight container. Freeze for 2 hours.
Step 4
For a granita, scrape with fork and continue to freeze.
Step 5
For sorbet, blend from frozen in a food processor until smooth or whisk mixture every 45 minutes to 1 hour until desired consistency.
