The combination of chocolate, oatmeal and coconut makes these scrumptious cookies the perfect pick-me-up.

cup (125 mL) margarine
½
cup (125 mL) brown sugar
¼
cup (50 mL) white sugar
1
egg, beaten
½
tsp (2 mL) vanilla
1
cup (250 mL) all-purpose flour
½
tsp (2 mL) baking soda
½
cup (125 mL) oatmeal
¼
cup (50 mL) shredded coconut
1
cup (250 mL) chocolate chips

Step 1
In large bowl, cream together margarine, brown sugar and white sugar. Beat in egg and vanilla.
Step 2
In medium bowl, whisk together flour, baking soda, oatmeal and coconut.
Step 3
Add dry ingredients to sugar mixture, stirring to combine. Stir in chocolate chips.
Step 4
Drop dough by teaspoonfuls onto ungreased baking sheet.
Step 5
Bake in 350ºF (180ºC) oven for 10 to 12 minutes or until golden brown. Transfer to cooling rack.
