Mix the cream cheese and condensed milk by hand for 5 minutes or until smooth. Add key lime juice to the mixture.
In a separate bowl, place gelatin in water and allow it to activate.
Once gelatin is ready, add to key lime mixture and make sure it is well incorporated.
Finally, add the whipped cream.
Lay the graham cracker crust at the bottom of the pie pan.
Fold the key lime mixture onto the graham cracker crust. Freeze pie overnight.
Remove frozen pie from freezer and slice a generous piece.
Bread a frozen piece of pie in eggs wash, and then breadcrumbs.
Fry the coated pie at 350ºF for 20 seconds.
Plate the crispy pie and drizzle it with reserved white chocolate and raspberry sauce. Enjoy!
