In a food processor, combine the chopped shrimp, 3 tablespoons of soy sauce, 1 teaspoon of sugar, 1 teaspoon of sesame oil, cracked black pepper to taste, and 1 teaspoon of fish sauce (optional for an extra umami kick). Blend the mixture until it forms a smooth, paste-like texture.
