Brown the butter in a saucepan over medium heat, about 2 minutes. Add the diced apples, brown sugar, granulated sugar, cinnamon and salt. Cook until the apples are soft and the liquid begins to thicken, enough to just coat the apples, about 8-10 minutes. Set aside to cool to room temperature.
Whisk together the egg and milk and set aside.
Lightly flour your work surface and unroll the puff pastry. Using a 4-inch round biscuit cutter, punch out your rounds. Add 1 heaping tablespoon of apple filling to the centre of each round. Dip your finger into the egg wash and run it around half of the circle. Fold the dough over and crimp together using a fork. Place on a parchment lined baking sheet. Repeat with the remaining rounds. You can also re-roll your pie dough scraps and cut out additional rounds.
Place the baking sheet in the freezer for 10 minutes to firm up.
Brush the tops of the hand pies with egg wash and use a paring knife to cut air vents. Air fry at 350°F for 10 minutes or until golden brown. Let cool on a wire rack for 5 minutes and enjoy.
