cup (150 mL) quick-cooking oats

cup (125 mL) Kalamata olives, pitted and chopped

jar (170 mL) marinated artichoke hearts, drained and chopped

green onions, thinly sliced

jar (370 mL) roasted red peppers, drained (or 2 large roasted red peppers, peeled and seeded)

tsp (5 mL) wine vinegar

tsp (5 mL) honey

Step 1
In large bowl, whisk eggs with oregano, salt and pepper. Stir in cheese, oats, olives, artichokes and green onions. Mix in pork; pat evenly into greased 9- x 5-inch (2 L) loaf pan.
Step 2
In food processor, blend red peppers with vinegar and honey; spread over loaf. Bake in 350°F (175 °C) oven until meat thermometer registers 170°F (77°C), about 1 hour, 30 minutes. Let stand 10 minutes before slicing.
