I love any breakfast or brunch dish that can be prepared the night before and baked fresh in the morning. The perfect recipe for hosting a brunch, this casserole is loaded with flavour. Have your breakfast sausage, eggs, and potatoes all in one! All it needs is a side of coffee.

Preheat the oven to 375°F. Grease a 9×12 inch baking dish.
In a large skillet over medium heat add the butter and sausage. Cook until the sausage is browned and cooked throughout.
Add the garlic, red onion, and pepper. Season with salt and pepper to taste. Cook until the vegetables have softened, about 5 minutes.
Add the shredded potatoes and toss to coat. Transfer mixture to prepared baking dish.
In a large mixing bowl whisk together the eggs, sour cream, milk and cheese. Season with salt and pepper.

Pour mixture over the potatoes and sprinkle with scallions. Bake until puffed and a toothpick inserted in the center comes out clean, about 45 minutes.
Let stand for 15 minutes before slicing and serving. Garnish with additional scallions.
