Fattoush is a Middle Eastern salad originating from Lebanon. It’s fresh, crunchy and herby with hints of citrus and fruitiness from the incredibly beautiful and delicious spice, sumac. What makes this salad extra special is the crispy toasted pita that gets tossed in with the veggies. Anytime there’s bread in salad, it’s going to be good, especially when it’s salted, spiced with za’atar and crunchy like a chip! Fattoush comes together very quickly and with its vibrant colours and fresh flavours it’s a wonderful dish for summer (or anytime, really).

Preheat the oven to 400ºF.
Open up the pita and separate it, brush each side with olive oil and season with sea salt and za’atar.
Bake for 5-10 minutes until crisp. Allow to cool while you put the salad together.
Prep all the veggies and place them in a big bowl.
Once the pitas are cool, break them up into pieces and place them in the salad bowl.
Whisk together the dressing, pour over the salad and toss.
Top with a few pinches of sumac or to taste. Serve immediately.
