This recipe produces two logs of goat cheese, one goated in finely chopped pistachios and cranberries and the other with fresh dill.

(4-oz) pkgs fresh goat cheese

Tbsp fresh dill, plus more if needed
1 ½
Tbsp finely chopped dried cranberries
1 ½
Tbsp finely chopped skinned pistachios
Crackers, for serving

Step 1
Put the packages of goat cheese in the freezer to harden slightly, about 15 minutes.
Step 2
Finely chop the dill and spread it out on the cutting board to dry for a few minutes. Mix together the cranberries and pistachios on another part of the cutting board.
Step 3
Remove the cheese from the freezer and take it out of the package. Gently roll 1 log over the dill, coating it almost completely. Do the same with the second log, rolling it in the cranberries and pistachios. Wrap the rolls in plastic wrap and chill until time to serve.
Step 4
Serve with crackers.
