Fish Tacos

lb(s) hard white fish fillets (500g)

cup store bought Ranch salad dressing (250ml)

tsp Tex mex seasoning mix (10ml)

tsp chili powder (2ml)

head, shredded Romaine lettuce

tomato, seeded and diced

- 8 taco shells

Lime Drizzling Sauce

¾
cup mayonnaise (175ml)
¾
cup plain yogurt (175ml)

tsp grated lime rind (5ml)

Tbsp lime juice (30ml)

Strawberry Avocado Salsa

½
cup diced strawberries (125ml)
½
avocado, diced

tsp lime juice (10ml)
2
tsp chopped parsley (optional) (10ml)

Mango Avocado Salsa

½
cup diced mango, about half (125ml)

tsp finely diced red onion (10ml)
½
avocado, diced
2
tsp lime juice (10ml)
2
tsp chopped cilantro (optional) (10ml)

directions

Step 1

Preheat oven to 350F/180C.

Step 2

In a bowl combine dressing and Tex-Mex seasoning.

Step 3

Spray a foil lined pan with cooking spray.

Step 4

Kids: Brush both sides of one fish filet with dressing mixture.

Step 5

Adults: Add chili powder to the remaining dressing and brush both sides of remaining filets with dressing mixture. Place in oven and bake for 10 minutes, or until fish flakes.

Step 6

Remove fish from oven and flake into pieces. Place flaked fish in bottom of tacos and top with salsa, lettuce and tomato. Drizzle with lime dressing.

Step 7

In a bowl combine mayonnaise, yogurt, lime zest and lime juice. Reserve.

Step 8

In a bowl combine strawberries, avocado, lime juice and parsley, if using. Reserve.

Step 9

In a bowl combine mango, avocado, lime juice and cilantro, if using. Reserve.
