A hot and spicy twist on fish tacos, complete with dipping sauce, guacamole, and tortillas.

Fish Twist Tacos

oz halibut fillets, but into three pieces

Tbsp blackening spice

avocado, sliced

cup purple cabbage, shredded

small tomato, diced

bunch cilantro, roughly shopped

Chipotle Sauce

Tbsp mayonnaise

Tbsp sour cream

Tbsp chipotle in adobo sauce, minced

Taco Dipping Sauce

shallot, minced

clove garlic, minced

Tbsp ginger, chopped fine

Tbsp whole grain mustard

Tbsp hot sauce

Tbsp Worcestershire sauce

Tbsp rice vinegar

Tbsp red wine vinegar

Tbsp soy sauce

Tbsp sesame oil

Tbsp canola oil
ground black pepper, to taste

Greer's Guacamole Recipe

ripe avocado

clove large clove of garlic, minced

small tomato, diced

Tbsp sour cream

freshly squeezed lemon, to taste
lemon pepper, to taste
salt, to taste

Blowtorch Tortilla Chips

Step 1

Warm tortillas in pan and let sit while assembling the remaining ingredients.

Step 2

Dredge fish fillets both sides in spice, then fry until golden on both sides in oil in a hot frying pan.

Step 3

Mix all ingredients for chipotle sauce, set aside.

Step 4

Mix all ingredients for dipping sauce, put into three ramekins.

Step 5

To assemble fill each tortilla with a piece of fish, one teaspoon of chipotle sauce, a few slices of avocado and a sprinkle each of cabbage, tomatoes and cilantro.

Step 6

Serve with dipping sauce, guacamole and chips.

Step 7

Mix all ingredients for chipotle sauce, set aside.

Step 8

Mix all ingredients for dipping sauce, put into three ramekins.

Step 9

Mash the avocados in a bowl, add remaining ingredients and serve immediately.

Step 10

Crisp the tortillas with a hand blowtorch then cut into triangles with a pizza cutter. Serve with guacamole.
