We are in the heart of peach season and the dog days of summer, so cool down with a fancy ice cream float. This version features spicy ginger beer and vanilla poached peaches. The vanilla peaches taste amazing with a scoop of vanilla ice cream or yoghourt too.

cup granulated sugar

Tbsp lemon juice, freshly squeezed

tsp vanilla bean paste

peaches

pint vanilla ice cream

cups ginger beer, chilled

Step 1
In a saucepan over medium heat whisk together the water, sugar, lemon juice and vanilla bean paste.
Step 2
As the mixture begins to simmer, add the peaches. Cook until softened, about 5 to 8 minutes. Remove from the poaching liquid and let cool.
Step 3
When the peaches are cool enough to handle, peel off the skins and slice into wedges.
Step 4
Divide the peaches evenly amongst 4 to 6 glasses.
Step 5
Top with a scoop of ice cream.
Step 6
Finish with ginger beer and enjoy!
