Gingerbread Cookie Bars are the dessert you didn’t know you needed this holiday season! They are beyond easy to decorate and much less time-consuming than individual cookies. There’s no need to chill the dough, truly making it a low-fuss and simple recipe.
They have all the flavours you want, but they’re topped with a cream cheese frosting for the ultimate dessert. Heading to a holiday party? You’re going to want to bring these with you! Don’t forget the sprinkles for a festive touch!

For cream cheese frosting:

Preheat oven to 350°F. Line a 9×13 baking dish with parchment paper and set aside.
Whisk together dry ingredients: flour, baking soda, salt, cinnamon, ginger and allspice.
In a separate bowl, add melted butter, brown sugar, granulated sugar, and molasses. Mix until combined and no lumps remain. Whisk in the egg and vanilla.
Add the wet ingredients to the dry, and mix well with a silicone spatula or wooden spoon. The mixture should have a dough-like consistency.
Add the mixture to the prepared baking dish. Using your hands or the spatula, spread into a thin layer.
Bake for 18-20 minutes or until just set. Be careful not to overbake! Remove and let cool for 1 hour on a wire rack.
For frosting: Beat together butter, cream cheese and vanilla until well combined. Slowly incorporate confectioners sugar until desired consistency is reached.
Top the gingerbread cookie bars with cream cheese frosting after they rest. Optional add sprinkles!
Cut into equal-sized bars and enjoy!
Tip: To make cutting easier, it is helpful but not required to leave the uncut bars in the fridge for 30 minutes until the frosting sets.
