These warm, chewy gingerbread cookies make for a perfect holiday snack.

cup brown sugar

tsp baking soda

tsp salt

tsp ground ginger

tsp cinnamon

tsp nutmeg

tsp ground cloves

eggs

cup molasses

cup pastry flour

Step 1
Allow to rest in fridge for at least 1 hour and roll out to 1/4 inch thick. Using a shaped cookie cutter, cut out gingerbread men and women.
Step 2
Sift pastry flour. In a large bowl, combine butter, brown sugar, spices and salt until well incorporated. Add molasses and mix. Add eggs one at a time, stirring into mixture. Then add pastry flour & baking soda and mix just till combined.
Step 3
Bake at 350ºF until golden, about 7-10 minutes.
