The theme of this colourful and vibrant grilled peach and quinoa summer salad is “What grows together, goes together.” Here, we are taking the best of August’s local produce and tossing it into the most flavourful, sweet and savoury quinoa salad. Think tree-ripened peaches, freshly picked blueberries, garden cherry tomatoes and sweet basil. Serve this dish hot or cold at your next summer barbecue!

For the dressing: Mix together all ingredients until well combined. Season to taste with salt and pepper. Set aside until ready to use.
For the salad: Cook quinoa, according to package directions. Let cool slightly.
Heat the barbecue to medium-high heat. Grill the peaches and corn until charred. Remove from the heat and let cool slightly. Slice the kernels off the corn.
Transfer quinoa to a serving bowl. Add peaches, corn, blueberries, avocado, tomatoes and jalapeno. Toss together with prepared dressing.
Garnish with crumbled feta and fresh basil. Serve warm or refrigerate until ready to serve.
