The orange and mint salsa balances the heat of this super-spicy marinated chicken burger and bring a sweet and refreshing twist.

cup (60 mL) vegetable oil

Tbsp (15 mL) ground cumin

tsp (10 mL) cayenne

tsp (5 mL) lemon juice

tsp (2 mL) salt

oz (720 g) boneless, skinless chicken breasts

burger buns

cup (60 mL) plain yogurt
Salsa

navel oranges
2
tsp (10 mL) vegetable oil
¼
tsp (1 mL) salt
freshly ground pepper
¼
cup (60 mL) mint leaves, torn

Step 1
Stir oil with cumin, cayenne, lemon juice and salt in a medium bowl.
Step 2
Add chicken and stir to coat. Cover and marinate for 30 minutes or up to 2 hours.
Step 3
Slice the skin off the oranges and cut into segments, removing any white parts. Chop and place in a bowl.
Step 4
Stir in oil, salt, pepper and mint leaves. Reserve.
Step 5
Oil grill and preheat to medium high.
Step 6
Remove chicken from marinade. Place on grill and cook for 5 to 7 minutes per side, or until chicken is no longer pink in the centre.
Step 7
Transfer grilled chicken breasts to buns. Top each burger with a dollop of yogurt and a scoop of orange-mint salsa.
