The recipe is super simple to follow, and each mouthful is bursting with bold flavours. We used some toppings we found in our fridge, but feel free to get creative and use whatever you have at home. The main ingredients in this recipe are hot honey, halloumi, and, you guessed it— flatbread. The best part? You don’t need to buy already-made hot honey from the grocery store — all you need is chili oil and honey to make this recipe come to life. The end result is a sweet and spicy dish that’s perfect for breakfast, lunch or dinner and it takes little to no time to make.

Preheat the oven to 350°F. Wrap the flatbread in aluminum foil (to prevent it from getting overcooked) and place it on the top rack to warm for 5 to 7 minutes.
Add chili oil to a pan, and when hot, add sliced halloumi. Drizzle a generous amount of honey, I used around 1 tablespoon.

Grill the halloumi on medium-high heat for about 3 minutes on each side, until each side is golden brown. Set aside and reserve the oil in the pan for the assembly.
For assembly: Spread roasted red pepper hummus dip (or the spread of your choice, alternatives include: tzatziki, hummus or harissa), grilled halloumi, olives, pomegranate, mint and a drizzle of honey along with reserved chili oil. Serve immediately.
