Inspired by the secret menu of the Los Angeles-based burger joint In-N-Out, this Flying Dutchman is an onion-wrapped burger that is delicious as it is a little messy—don’t worry—it’s all worth it!
Caramelized onions are the star of the show in this easy Flying Dutchman burger recipe. They replace the burger buns, giving us so much flavour in each bite. Feel free to assemble as you wish, but I liked adding my cheese directly on my patties, as it helped them stick together. Don’t forget the secret sauce and lots of napkins for this viral burger! Recipe tip: Wrap your burger in parchment paper to make it easier to eat!

For secret sauce:

Combine sauce ingredients and keep in the fridge till ready to use.
Cut onions into thick slices. Reserve end pieces for another use
Add oil to a cast iron pan or griddle. Sprinkle sugar, salt and pepper on onions. Place onion slices on skillet and cook till golden brown on both sides. Be careful not to separate the rings when flipping, as the more caramelized the onions get, the softer they are.
Divide beef into 3-ounce patties. Flatten with a burger press and season with salt and pepper. Cook the meat, adding some mustard to the patty before flipping.
Once the meat is cooked, add cheese. Cover until cheese is melted
Assemble burgers, allowing the onions to serve as the buns. We like to add the sauce on top of the second patty! For ease, serve with parchment paper
