These tasty Saffron and Pistachio Kulfi Popsicles are the perfect way to celebrate Eid Al Adha. Kulfi is a traditional Indian dessert that’s similar to ice cream and often sold by street vendors in either ice cream or popsicle form, but it’s surprisingly easy to make at home! It features a creamy milk base that’s simmered together with fragrant saffron, crushed pistachios and ground cardamom and then frozen in popsicle molds to create a fun, cold dessert that’s perfect for the holiday. Kids and adults alike are sure to enjoy these!

This recipe requires 6 hours freezing time.
In a medium sized pot add whole milk, evaporated milk, condensed milk, ground pistachios, saffron strands, cardamom and rose water (optional). Heat until it comes to a gentle boil. Keep stirring to prevent scorching and ensuring a smooth and cream consistency.
In a bowl add the corn starch and 1 Tbsp hot kulfi mixture, to create a slurry. Pour the corn starch mixture to the pot and stir.
Remove the pot from the heat and let the mixture cool for 10 minutes.
To assemble, pour the kulfi mixture into popsicle molds, leaving a little space at the top for expansion during freezing. Insert the popsicle sticks into each mold and freeze for at least 6 hours, preferably overnight.
Once fully frozen, remove the popsicles from the molds by briefly soaking the molds into hot water or running them under warm tap water.
Serve popsicles immediately.
