Tips: You may substitute loin chops for rack chops, depending on availability. For a more adventurous recipe try plating the chops with the sauce spooned over top, then briefly putting the plates under a hot broiler until the sauce gets browned and bubbly.

tsp (5 mL) dried oregano

cup (125 mL) feta cheese, crumbled

rack racks of lamb, cut into 16 chops (approx. 57 g each)

Step 1
In a sauce pot, gently simmer cream stock and oregano over medium low heat and add feta cheese a little at a time, stirring to incorporate smoothly.
Step 2
In a separate pan, fry lamb chops over medium-high heat to desired doneness (about 4 minutes per side for medium).
Step 3
Spoon sauce over lamb chops and serve.
